Banana Cream Leftover Nests

 This little guy sits with me in the kitchen, watching me cook/bake/sweetmake:

For some reason, orchids remind me of Predator.  You know, from Predator,  Predator 2,  Alien v. Predator,  Aliens v. Predator: Requiem, and Predators.  I may or may not have seen the last three opening weekend…

Anywho,  last night we ate the remaining Meringue Nests from last weekend’s MUFFIN post.  I was on the fence about them before, but we tried a different topping which let meringue win my heart.  

I guess the secret is to switch up textures.  Before we just ate strawberries in them.  Last night, I added a banana/greek yogurt mixture and this was restaurant-delicious.  And it’s still REALLY good for you!  Egg whites, greek yogurt, bananas?  I’ll take it.

Need:  staples + meringue nests + plain greek yogurt + cinnamon + allspice + banana

Step 1:  Make Meringue Nests.

Step 2:  In a small bowl, mix yogurt and honey.  Plop into nests.

  • 1/2 cup low fat plain greek yogurt
  • 1 1/2 tablespoons honey (add a little more for your taste preference)

Step 3:  Add sliced banana.

  • 1/2 to 1 whole banana

Step 4:  Top with honey and a sprinkle of spices.

  • Drizzle of honey
  • Two shakes cinnamon
  • One shake allspice

  2. This looks so yummy! I love this kind of banana topping on my pancakes of a sunday morning. I’ll have to try it on meringue nests too…. when bananas are a little bit cheaper (not AU$15 per kilo!). Alex.

    • Thanks, Alex! These caught me by surprise and they’re worth the effort of making the meringues. That’s crazy bananas are that expensive! I won’t take bananas for granted ever again… sheesh.
